Triple Chocolate Brownies
I’m always trying to find ways to make recipes vegetarian and vegan, without sacrificing quality. It’s surprising how many I have found, that not only can be ‘veganized’ with fantastic results, but are actually BETTER than their non-vegan counterparts!
These brownies are a perfect example.
Who would believe that you can make an absolutely delicious pan of brownies with absolutely no butter, or eggs? It doesn’t seem believable to even say that! I mean I’ve been making brownies for years and have always considered those two ingredients to be the heart and soul of a good pan of brownies. No longer
By taking a jump and swapping out the butter for veggie oil at a 1:1 basis the brownies still turned out absolutely perfect, and actually had even a bit more ‘chew’ than normal (I am a fudge-y brownie fan). By adding the baking powder it gives them just enough lift, but not too much to detract from the fudge-y amazing-ness.
Since the chocolate is the star in this recipe, I recommend using a high quality bar like Ghirardelli, or Lindt. Also, if you’re a strict vegan check the ingredients as some chocolates contain milk solids and/or whey. I haven’t really found a method to which percents or brands do, it seems a bit hit or miss.
Make sure to cut these brownies in small squares as they are rich! They are also addicting so you might want to find a good place to hide them so the whole pan doesn’t ‘mysteriously’ disappear…
- 2 cups all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1 cup water
- 3 oz unsweetened chocolate
- 3/4 cup cocoa powder
- 2 1/2 cups white sugar
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 3 oz chocolate chips
Heat oven to 350, line a 9x13 pan with foil, and spray well.
Sift the flour, cocoa, salt and baking powder together.
Bring the cup of water to a boil, either on the stove top, or in the microwave. While the water is warming up, breakup the 3 oz of unsweetened chocolate with your hands and place in a medium bowl. Once the water is boiling, pour a bit over the chocolate to soften it and stick it in the microwave for about 30 seconds. Take it out, and pour the rest of the hot water over it. Stir it until their are no lumps.
Stir the rest of the ingredients (except the chocolate chips) into the hot chocolate mixture and beat with a wooden spoon until smooth and glossy.
Stir in the flour mixture until just combined.
Pour in the chocolate chips and combine. Pour the brownies into the prepared pan and bake for 30 - 35mn.
Let brownies cool in the pan, then use the foil 'sling' to take them out and cut into bite sized squares. Enjoy!
